We have always used organic Italian almonds because they are unpasteurized, but the crop failed. We decided to switch to California certified organic. The flavor is much better without the hard and bitter almonds one finds in the Italian and Spanish crop. The downside is that the USDA requires pasteurization but allows them to be called raw because they are lightly steam pasteurized which hits only the outside of the nut while the inside remains fresh. The good news is that we have tested these almonds ourselves and found 100% germination! They are alive. The flavor is excellent and we are very happy to have a more local source of a living food.

Unpasteurized, Soaked in filtered water with no salt in small handmade batches in our peanut-free and gluten-free commercial kitchen on our small farm, low-temperature gently dried below 105 degrees F to preserve vitamins and enzymes.
Kept in ideal conditions, bagged in USA-made foil bags with oxygen removed for awesome taste and no rancidity. We guarantee they are excellent.
