raw - either fresh shelled or our activated recipes where low drying temperatures do not damage nutrients.
activated - We soak in filtered water and Redmond sea salt releasing vitamins and enzymes as the nut sprouts, and dissolving enzyme inhibitors to make them digestible. Low-temperature drying preserves delicate nutrients.

amazing activated recipes - Family Recipe Sea Salt Crispy is our basic soaked and dried (sprouted, but only slightly) recipe, with Redmond sea salt. The natural sweetness of the native pecan and a touch of salt makes it awesome in sweet or savory recipes. Apple Pie uses only local wildflower honey, apples, and cinnamon (no refined sugar) for a deeply flavorful slightly sweet topping on plain yogurt, oatmeal, pancakes, spinach salad with strawberries, or just a snack with healthy oils, sugar, and protein, and Mesquite-Smoked gives a bacony smoke and crunch when sprinkled on salads, greens, vegetables, soups, pastas and more.

We encourage you to enjoy the activated native pecans like we do, as a condiment sprinkled on lots of basic whole foods like rice, squash, grains, yogurt, oatmeal, vegetables, soups, etc. to economically add lots of flavor and crunch that makes a plain dish fantastic. Pecans are 70% oil, providing healthy fats in an unrefined, unprocessed form. A little goes a long way when you add just a few to make your dish something special.
